Ingredients
  

  • 2 medium sweet potatoes about 1 to 1.25 lb total
  • 1 to 1.5 tbsp avocado oil or olive oil
  • 1 to 2 tsp cornstarch optional but recommended
  • 1/2 tsp fine salt plus more to finish
  • 1/2 tsp paprika sweet or smoked
  • 1/4 to 1/2 tsp garlic powder
  • 1/8 tsp black pepper
Optional for Serving
  • dip of choice such as Greek yogurt dip, ketchup, spicy mayo, or honey mustard

Method
 

  1. Peel the sweet potatoes if desired, then cut them into fries about 1/4 inch thick, keeping the pieces as even as possible.
  2. For wedges, cut each sweet potato lengthwise into halves, then quarters, then eighths.
  3. If desired, soak the cut fries in cold water for 20 to 30 minutes.
  4. Drain and pat the fries very dry with a clean towel or paper towels.
  5. Add the dried fries to a large bowl and toss with the oil first.
  6. Sprinkle in the cornstarch, salt, paprika, garlic powder, and black pepper, then toss until lightly and evenly coated.
  7. Preheat the air fryer to 380°F for 3 to 5 minutes.
  8. Arrange the fries in the basket in a mostly single layer without packing them tightly.
  9. Air fry at 380°F for 12 to 16 minutes, shaking the basket every 4 to 5 minutes.
  10. For wedges, cook for 15 to 20 minutes, shaking once or twice, until tender inside and browned on the edges.
  11. Add 1 to 3 more minutes if you want them crispier, watching closely near the end.
  12. Sprinkle with a little extra salt after cooking and let the fries rest for 2 minutes before serving.
  13. Serve warm with your favorite dip.

Notes

  • Drying the fries matters more than soaking, because wet fries steam instead of crisp.
  • Do not overcrowd the basket, or the fries will soften from trapped moisture.
  • Cornstarch should be a light dusty coating, not a thick white layer.
  • Preheating helps the fries start crisping sooner.
  • Shake the basket every 4 to 5 minutes for more even browning.
  • Finish with salt at the end to help keep the surface drier.
  • Let the fries rest for 2 minutes after cooking so steam can escape and the edges stay crisp.
  • If using a spice blend with sugar, watch closely near the end because sweet potatoes brown quickly.
  • Refrigerate leftovers for 3 to 4 days and reheat in the air fryer at 375°F for 3 to 6 minutes.
